Spicy Scrambled Eggs a la Jacintaz3


I love being a part of the Taste 100 Tastemakers with the Happy Egg co. It was fun taking part in this eggciting challenge (cheesy, I know!!)

We were asked to come up with a scrambled egg recipe of our own and this one is a firm favourite of mine. It probably has something to do with the fact that Hubs would make it for me when we were dating. Spicy! The eggs, that is!! 😉

As part of the challenge we had to use

  1. A vegetable or a source of meat – I used onions and tomatoes
  2. A herb or a spice – I used coriander and paprika and turmeric
  3. A surprise ingredient – Cheese and finger chillies

Here’s my (our) recipe for Spicy Scrambled Eggs a la Jacintaz3


  • 1 and a half  tablespoons  oil
  • 4 eggs (we used eggs from the Happy Egg Co)
  • 3 tomatoes
  • 1 small onion
  • Chopped Coriander
  • Grated Cheddar cheese (about 2 tablespoons)
  • A pinch of paprika
  • 1/4 teaspoon turmeric
  • 1 green finger chilli – chopped
  • Salt and pepper to taste


Method –

20150129_210753_resizedAdd oil to a pan. Fry the onions.

20150129_211111_resizedWhen the onions are glazed or lightly brown, add the tomatoes.

20150129_211537_resizedThen add the coriander, paprika, salt, pepper and turmeric.

20150129_211648_resizedCook till tomatoes are soft. Add the chilli.

20150129_212042_resizedAdd the beaten eggs and scramble. When half done, add the grated cheese and cook till done.

This style of scrambled eggs is fusion food with the spices and the cheese blending perfectly. We love it. Try it out -I’m sure you’ll love it too.
