I know we should be eating more fish – it’s so healthy. The benefit of Omega3 and cognitive development make fish important to our diet. We tend to do a fish dish on the weekend and we try out different recipes but I am hoping to incorporate more fish into our diet.
The children love salmon and this was something we tried out this week. It was fragrant and succulent and delicious.
Here’s what you will need to make Jacinta’s Oriental Baked Salmon
- 1 kg Salmon fillet
- 2 stems lemon grass
- 1 inch ginger julienned
- 4 garlic cloves finely sliced
- 1 Red chilli
- 2 tablespoons fish sauce
- Juice of half a lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Clean and wash the fish thoroughly and get the ingredients ready.
Marinate the fish with all of the above for about 2 hours.
Wrap the fish in foil so that there is no outlet for the steam to escape. You need to have enough foil to fold over and seal to form a kind of envelope.
Pre-heat the oven to 190 degrees.
Pop the fish in a baking tray and cook for 15 minutes.
This method actually steams the fish more than bakes it. It ensures that all the flavours are absorbed by the fish and the result is amazing.
We served this with rice drizzled with a little garlic oil and steamed broccoli.
