My Favourite Desk Lunch

As you must know, I’m a stay at home Mum. Since I also blog almost full time and do other bits and pieces of online work, I ensure that I have a ‘kind of’ work day at home.

This obviously includes ensuring that I am ‘dressed’ for work to increase efficiency and taking time out for lunch.

My lunch, obviously allows me flexibility to have whatever I choose since I am home. Which also means that I snack much more than I should. But, most afternoons,  I have a desk lunch. This normally includes a sandwich  – a healthy sandwich.

I’m not a huge fan of brown bread so I tend to get the ‘healthy’ in my sandwich by including greens and vegetables.

This is one of my favourites – with mixed seeded batch bread, tuna, capers, fresh lettuce and Leerdammer cheese. And yes I do add a chutney to go with it.

Furniture Work has launched an e-recipe book with a number of healthy meal ideas. I can’t wait to try them soon. Now, though I’m on Easter break and Hubs is rustling up some mean dishes for me. No desk lunches for the next 10 days. 🙂
