…so here is an easy recipe that I tried out with my three. The children love baking and I guess so do I. Ever since they have been kitted out with their aprons and hats and baking bowls – we have been baking even more.
Since it is National Baking Week and we have had a school holiday – we have spent our time baking all sorts of stuff. This is one that went down very well with everyone and was super easy to make.
Easy Peasy Mini Victoria Sponges
4 oz self raising flour
4 oz caster sugar
4 oz butter
A dash of milk
A teaspoon of vanilla essence
Fresh whipped cream
Strawberry jam or preserve
Pre heat the oven to 180˚C
Cream the butter and sugar until smooth
Sift in the flour
Add the beaten eggs
Add the milk and the vanilla essence
Stir through till a smooth batter is formed.
Place the cup cake cases in the cup cake baking tin.
Spoon in a little of the mixture into it – it should be a little more than half full
Bake for about 20 minutes.
Cool the cakes, then, cut in half.
Spread the jam on one side, then add the whipped cream and place the other side on top, add a squirt of cream and finish off with a strawberry on the top.
Absolutely delicious with afternoon tea!
