Chicken Tikka Kebab


1 kg chicken

2 teaspoons ginger paste

2 teaspoons garlic paste

1 tsp cumin seeds

1 tsp coriander seeds

Dash of lemon juice

1 teaspoon Paprika

1 tsp chilli powder

1 tsp turmeric

250 ml natural yogurt

1 tbsp oil

200g mushrooms (button or closed cup)

2 peppers (green and red)

2 onions quartered.



Roast the cumin and coriander seeds in a frying pan. When it just begins to smoke, take it out of the pan and grind it using a mortar and pestle.

Mix all the ingredients with the chicken and leave to marinate for at least 2 hours. It is better to leave it overnight to get all the absorbed.


Put the chicken onto the skewer interspersing with peppers, onions and mushrooms.

Grill on high for about 12 minutes turning and basting every 3 minutes.

Serve hot with Persian rice or flat bread. Add a salad or a Raita as a side.
