  1. Pre-heat the oven to 180 degrees
  2. Heat the oil in a frying pan/wok.
  3. Fry the onions for about 3 minutes.
  4. Add the mince and the ginger and garlic and the beef stock.
  5. Fry until the meat is brown.
  6. Add the courgette and fry for another 2 minutes.
  7. Add the tomatoes and the puree and the coriander. Season with salt and pepper.
  8. Cover and cook for about 20 minutes.
  9. In the meantime, set the potatoes to boil.
  10. Once boiled, mash with the cheese, milk and salt and pepper.
  11. Place the meat in the roasting dish.
  12. Add the mashed potatoes over and gently smooth over with the back of a spoon.
  13. Use a fork to criss cross over the top.
  14. Cook in a pre-heated oven for about 25 minutes until top is golden.
