Egg and Potato Salad Recipe from a Shortcut Eggspert

Being a Shortcut Eggspert, I am always on the lookout for really quick recipes that can be served up in minutes but taste great too.

Here is a potato and egg salad that is perfect for picnics and is great served warm or cold.

The dish is ready in about 15 – 20 minutes from start to finish.

Ingredients
3 medium potatoes boiled
2 tomatoes chopped
1 medium onion chopped
4 eggs boiled
2 tablespoons mayonnaise
1 teaspoon balsamic vinegar
Chopped coriander

Method

Chop the potatoes into 1 inch cubes. Add the tomatoes and the onions.
Add the balsamic vinegar and the mayonnaise and salt and pepper to taste.
Mix them together.
Add the coriander.
Add 3 eggs chopped and mix again but not too much or it will break up.
Decorate with sliced tomato and egg.

This is best served with roast beef sandwiches.  Absolutely delicious.
