I love cooking with olive oil and I also love to use butter in my cooking. How nice to be sent some delicious Bertolli with butter and olive oil to try out. This is ideal for cooking or spreading and gives a lovely flavour to any meal.
I was asked to create a recipe with the Bertolli spread and I decided that with the weather hotting up as it was, it was perfect for a Potato Salad. Of course the potato salad would be served as an accompaniment to a barbecue. You can’t have high temperatures and not have a barbecue.
Potato Salad Recipe
Cooking time: 10 minutes
Preparation Time: 10 minutes
- 6 medium potatoes
- 100 g of cherry tomatoes – cut into quarters
- 1 large onion chopped
- 3 eggs – boiled and diced
- Bertolli butter with olive oil – 1 generous tablespoon
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Coriander to decorate
- Boil the potatoes and chop them into 1 inch pieces
- In a bowl, mix the potatoes along with the rest of the ingredients.
- Add the Bertolli (it should mix easily as the potato should be warm, else melt it and add to the mixture)
- Add a little coriander for decoration.
The potato salad is ideal for hot summer lunches and can be served hot or cold. We had ours with a barbecue and it complimented the meal so well.
Besides, the Bertolli spread is great for basting the barbecue ingredients too. It adds a wonderful flavour.
